Ingredients 
 
Add to slow cooker on low setting overnight 
 
1 32 oz container of turkey stock (can use any stock) 
1 cup sliced zucchini 
1 onion finely chopped 
1 cup carrots sliced 
4 small potatoes cubed 
2 6oz cans of organic tomato paste 
3 beets peeled and chopped 
1/8 cup olive oil 
2 cups water 
1 bay leaf 
1 tsp dried parsley, basil, oregano 
garnish fresh sour cream and chopped cilantro 
salt and pepper to taste |
